
I support general pizza topping gimmickry (clams, walnuts, the venerable Hawaiian) but I want to call out pickles specifically as an awesome pizza topping that is overdue for mainstreaming.
For best results, use thick chips of the crunchiest pickles you can find. Go for strong flavors. It may require some art to keep the pickles crunchy during baking (I don’t know I’m not a pizza scientist) but it’s been done before and done well.
This isn’t a Pittsburgh thing, or rather it isn’t just a Pittsburgh thing. All the peoples of the world deserve to experience pickles on a pizza.
